Cooler temperatures brings comfort foods back to the menu. I couldn’t wait for the temperatures to cool down and had to make one of our family’s favorites: Chicken Pot Pie! I love making mine from scratch and the crust will make you feel like you stepped back into your grandma’s kitchen. It’s light, flaky and perfectly compliments the filling without having a ‘dough-y’ texture. One bite and you’ll never use a store-bought pie crust again!
The variations of pot pie are of a list a mile long. You can make it all your own with different meats, vegetables and spices. When I’m in a hurry, I like to use biscuits for the top but when I have a chance, it is well-worth the extra effort to create a pie-like crust and fill it full of deliciousness.
None of my food has ever been awarded a beauty prize but that’s the great thing about food – it doesn’t have to be pretty to taste good. Other blogs show you prize-winning photos of food but I feel like these give you a false hope of creating something beautiful.Personally, I’d rather it be tasty!
