Preheat oven to 350.
Prepare muffin tins with paper liners.
In a large bowl, whisk the flour and baking soda together. Set aside.
In a large mixing bowl, cream softened stick of butter.
Add sugar and mix until fluffy.
Add egg, vanilla, milk.
Slowly add in flour mixture.
Using a spatula, fold in chunked bananas and granola.
Fill muffin cups 2/3 full.
Sprinkle remaining granola on top of the muffins.
Bake approximately 20-24 minutes - or until golden brown.
Cool and remove from muffin tin.
