Chunky Granola Banana Muffins

Ingredients

  • 1 1/4 cups flour
  • 1 tsp baking soda
  • 1/2 cup butter salted
  • 2/3 cup sugar
  • 1 egg
  • 2 tsp pure vanilla extract
  • 1 cup bananas chunked
  • 1/4 cup milk
  • 1 cup granola divided

Instructions

  1. Preheat oven to 350.

  2. Prepare muffin tins with paper liners.

  3. In a large bowl, whisk the flour and baking soda together. Set aside. 

  4. In a large mixing bowl, cream softened stick of butter. 

  5. Add sugar and mix until fluffy. 

  6. Add egg, vanilla, milk. 

  7. Slowly add in flour mixture. 

  8. Using a spatula, fold in chunked bananas and granola. 

  9. Fill muffin cups 2/3 full. 

  10. Sprinkle remaining granola on top of the muffins. 

  11. Bake approximately 20-24 minutes - or until golden brown. 

  12. Cool and remove from muffin tin. 

  13. Enjoy!
